  • Thickness: A thickness of 2 mil (.25 mm) is sufficient for a grill mat. Some chefs don’t want the grill mat to be too thick—they want the food to have the grill marks, for aesthetic purposes.

  • PTFE coating: This determines the durability of the mat, the slickness of the surface, and the ease of cleaning. A double-coated mat is of much higher qualitythat is already a professional quality mat. You can tell that a grill mat is double-coated when you don’t notice the texture of the fiberglass squares on either side of the mat.

  • Bigger is better: The size of the mat should be between 13″-17″. Smaller mats will limit how much food you can cook at once. If it is too big, you can always cut a larger mat to the size you need.

  • Use cooking oil: Just like when frying on a Teflon fry-pan, you should apply some cooking oil, or spray-on oil, to your grill mat.

  • Use silicon-coated barbecue utensils: The tongs and spatula for moving around the meat on the grill should be silicon-coated. Wood utensils are also okay. That minimizes the chance of putting a hole in or scratching your grill mat.

  • Make sure the mat is level: If the mat isn’t level, your food might slip through the barbecue grating.
